Make a pot of tomato sauce to share with friends and family

“Growing up, my great grandmother used to make this dish for special occasions when we were all together,” says Katie, a New Women New Yorkers volunteer. “As part of a big Italian family, some of my best memories are sitting all around the table enjoying a meal together,” she adds.  

Katie’s great grandmother lived to be 103, and since her passing Katie has taken over making this dish for holidays. “It reminds me and my family of our Italian roots and traditions, and it is also a tribute to her – an Italian immigrant who never stopped working to provide for her family,” says Katie.

Tomato Sauce

Prep time: Approx. 25 minutes
Cook time: 60 to 90 minutes

Ingredients:

4 tbsp Olive Oil
1/2 pound spareribs and sausage
1 can crushed tomatoes (Cento 28oz)
1 can tomato paste (Hunts 6oz)
1 clove garlic, chopped
1 tsp oregano
1 tsp basil
1/2 small onion, chopped

Instructions:

  1. Heat the oil in a large sauce pot.
  2. Add garlic and onion to the pot and cook until lightly browned.
  3. Remove garlic and onion from the pot.
  4. Add spareribs and sausage to the pot and cook until browned.
  5. Add all remaining ingredients back into the pot.
  6. Simmer the sauce for 60 to 90 minutes.
